OBSERVED AN IMPROPER FINAL RINSE TEMPERATURE AT THE HIGH TEMPERATURE DISHMACHINE. THE FINAL RINSE TEMPERATURE ONLY REACHED 172F. MANAGEMENT INSTRUCTED THAT FINAL RINSE TEMPERATURE MUST BE ABOVE 180F. CRITICAL VIOLATION 7-38-030.
