All food not stored in the original container shall be stored in properly labeled container PREP FOODS INSIDE STORAGE COOLER MUST BE LABELED/DATED, AND DRIED FOOD STORAGE CONTAINERS MUST BE LABELED.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. BROKEN GASKETS ON TWO DOORS PREP REACH IN COOLER MUST BE REPLACED, AND RAW/BARE WOOD AT NEW JUICE BAR AREA, MUST BE SEALED.
All utensils shall be thoroughly cleaned and sanitized after each usage. THE FOLLOWING NOT CLEAN, MUST CLEAN/SANITIZE; COOLERS, FREEZERS, COOKING EQUIPMENT, EXTERIOR OF DRIED FOOD STORAGE CONTAINERS, AND MOP SINK.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST CLEAN FLOORS; UNDER, BEHIND EQUIPMENT IN KITCHEN AND AT CORNERS AND ALONG WALLS THRU-OUT DINING AREAS, CLOSETS AND BASEMENT, AND REPLACE BROKEN AND MISSING FLOOR TILES THRU-OUT DINING AREA, KITCHEN AND BY FRONT DOOR.
The walls and ceilings shall be in good repair and easily cleaned. MUST CLEAN WALLS IN KITCHEN, FINISH WALLS AND PAINT INSIDE CLOSETS AT THE NEW/ADDITIONAL DINNING AREA, SEAL OPENINGS THRU-OUT PREMISES AROUND PIPES AND ON WALLS AND PROVIDE BASEBOARDS WHERE NEEDED AT BOTTOM OF WALLS. ALSO CLEAN HOOD AND FILTER ABOVE COOKING EQUIPMENT IN KITCHEN AND REPLACE DAMAGED AND MISSING CEILING PANELS.
MUST REMOVE UNNECESSARY ARTICLES THRU-OUT BASEMENT, CLEAN AND ORGANIZE TO PREVENT PEST HARBORAGE. ARTICLES MUST BE STORED OFF FLOORS, AWAY FROM WALLS.
CLEANING TOWELS MUST BE PROPERLY STORED.
