Observed the following potentially hazardous foods at improper food temperatures in the top of the reach in cooler: turkey @ 49.3F; ham @ 50.0F - 54.3F; capicola @ 57.2F; roast beef @ 54.3F; Cheese @ 47.8F; sliced tomatoes @ 46.0F; and guacamole @ 53.8F. Instructed all potentially hazardous foods must be held at 40F or less or 140F or more at all times. Operator voluntarily discarded denatured foods during inspection. Critical violation 7-38-005(a).
