Found approximately 40 mice droppings in area near ice machine, and in "pick up" area near rear kitchen door. Instructed to remove all droppings, detail clean and sanitize area. Advised to contact pest control for service to minimize pest problem. Serious violation 7-38-020.

Found aluminum foil used as a liner in several places in kitchen area (bottom shelves of prep table, on cooking equipment, etc). Advised aluminum foil is not permitted; all surfaces must be smooth and easily cleanable. Operator removed during inspection.
Found black and orange mold like substance in upper interior of ice machine. Instructed to remove, clean and sanitize machine.
Found floors with debris and dirt build up under ice machine and "pick up" area. (Must elevate all items at least 6 inches above the floor in this area to allow proper cleaning).) Found grease and dirt build on floors under steam table and prep coolers. Found excessive grease build up on floors in between grill and fryers. Must pull all equipment away from walls and remove grease. Must detail clean all areas, clean and better maintain floors throughout kitchen area.
Instructed to provide thermometers for all refrigeration units. Must display in a conspicuous place inside units.
