MUST CLEAN AND MAINTAIN THE FOLLOWING: EXTERIOR SURFACES OF ALL COOKING EQUIPMENT, FRYERS, STEAMER, WOKS, INTERIOR BOTTOM OF FRYERS TO REMOVE GREASE, UNDERNEATH PREP TABLES AND TABLE AT DISHMACHINE AREA TO REMOVE GREASE. CLEAN SHELVES INSIDE OF WALK-IN AND REFRIGERATION UNITS.
CLEAN FLOORS UNDER DISHMACHINE AND CLEAN UNDER ALL COOKING EQUIPMENT TO REMOVE GREASE AND FOOD PARTICLES.
MUST CLEAN WALLS AROUND AND BEHIND ALL KITCHEN EQUIPMENT (COOKING, SINKS, DISHMACHINE, UNDER DISHMACHINE). CLEAN WALLS IN BASEMENT AREA AROUND EQUIPMENT IN PREP AREA OF KITCHEN. OBSERVED DUST BUILD UP AT CEILING ABOVE DISHMACHINE. MUST REMOVE.
REMOVE CLUTTER UNDER PREP TABLES AND IN BASEMENT WHERE NECESSARY, ORGANIZE AND MAINTAIN AT ALL TIMES.
MUST PROPERLY STORE UNUSED WASH CLOTHS IN WATER WITH CHEMICAL SANITIZING SOLUTION.
