OBSERVED ROP FOOD (PORK) IN THE WALK-IN FREEZER AND A VACUUM PACKAGING MACHINE ON THE PREMISES THAT WAS TURNED ON. ALSO OBSERVED ROP FOOD (PORK) BEING COOKED SOUS VIDE DURING THE INSPECTION. MANAGEMENT INSTRUCTED TO DISCARD ALL ROP FOOD THAT WAS PACKAGED ONSITE WITHOUT AN APPROVED VARIANCE AND HACCP PLAN AND ALL COOKED SOUS VIDE FOOD BEING PREPARED DURING THE INSPECTION. MANAGEMENT VOLUNTARILY DISCARDED APPROXIMATELY 100# OF FOOD WORTH $500. MANAGEMENT INSTRUCTED TO HAVE AN APPROVED VARIANCE AND HACCP PLAN ONSITE BEFORE USING THE VACUUM PACKAGER AND THE SOUS VIDE MACHINES. PRIORITY FOUNDATION 7-38-005. CITATION ISSUED.
