Equipment and utensils should get proper exposure to the sanitizing solution during the rinse cycle. Bactericidal treatment shall consist of exposure of all dish and utensil surfaces to a rinse of clean water at a temperature of not less than 180F. The ice shaver has a food contact part that cannot be removed at this time, provide the proper tool for removing said part for proper sanitizing.
The syrup dispenser drain line has no receptacle, provide a spill proof container for waste syrup.
All food shall be from sources approved by health authorities and safe for human consumption. Unable to ascertain where truck will be maintained and housed.
