INSTRUCTED TO REHEAT FRESH SOUP FROM WALK-IN COOLER MAKING SURE THE PRODUCT REACHES AN INTERNAL TEMPERATURE OF 165 DEGREES AND HOLD ALL SOUPS IN HOT HOLDING UNIT AT 140 DEGREES OR ABOVE UNTIL SERVED. CRITICAL VIOLATION 7-38-005(A).
