OBSERVED PLATES AND SINGLE SERVICE ITEMS TO BE STORED WITH FOOD CONTACT SURFACES FACING UP AT THE FRONT PREPARATION AREA. INSTRUCTED MANAGER TO STORE ALL PLATES AND SINGLE SERVICE ITEMS INVERTED TO PROTECT AGAINST POTENTIAL SOURCES OF CONTAMINATION.
OBSERVED SINGLE SERVICE CONTAINERS BEING USED, WASHED, AND REUSED THROUGHOUT FACILITY. INSTRUCTED MANAGER TO DISCARD ALL SINGLE SERVICE ITEMS AND FOOD CONTAINERS ONCE USED, AND TO ONLY USE FOOD GRADE CONTAINERS DESIGNED FOR MULTIPLE USES.
OBSERVED SHELVES IN FRONT PREPARATION AREA 2 DOOR REACH IN COOLER TO BE EXTREMELY RUSTED WITH PAINT/SURFACES FLAKING OFF. INSTRUCTED MANAGER TO REPAIR OR REPLACE ALL DAMAGED AND RUSTED SHELVING IN 2 DOOR REACH IN COOLER.
OBSERVED HEAVY GREASE BUILD UP CAUSING DRIPS IN THE EXHAUST HOOD AT FRONT PREPARATION AREA. INSTRUCTED MANAGER TO CLEAN AND MAINTAIN EXHAUST SYSTEM FREE OF EXCESSIVE BUILD UP AND DRIPS.
OBSERVED 2 DOOR PREPARATION COOLER IN BACK OF FACILITY COVERED IN TABLECLOTHS AND USED AS STORAGE AS WELL AS LARGE 3 DOOR PREPARATION COOLER STORED IN NON-FUNCTIONAL WALK-IN COOLER. INSTRUCTED MANAGER TO REMOVE ALL UNNECESSARY AND UNUSED EQUIPMENT THAT IS NOT ESSENTIAL TO OPERATION OF FACILITY.
OBSERVED MOPS STORED IN BUCKET IN REAR HALL OF FACILITY. INSTRUCTED MANAGER TO STORE ALL MOPS SO THEY ARE ABLE TO EASILY DRY IN BETWEEN USE.
