FOUND COLD TCS FOODS AT IMPROPER COLD HOLDING TEMPERATURES IN THE WALK-IN COOLER. COOKED CHICKEN WINGS AT 48 F, SOUP AT 60 F, AND CHICKEN TINGA AT 45 F. INSTRUCTED TO DISCARD AND DENATURE SAID TCS FOODS AND ALWAYS MAINTAIN ALL COLD HOLDING TCS FOODS AT OR BELOW 41F. PRIORITY VIOLATION 7-38-005. CITATION ISSUED.
FOUND HEAVY GREASE BUILD UP INSIDE OF FRYERS. MUST CLEAN AND MAINTAIN. OBSERVED BLACK MOLD-LIKE BUILD UP ON THE DISHMACHINE TRAYS THAT HOLD THE DISHES IN PLACE INSIDE OF THE DISHMACHINE. INSTRUCTED TO CLEAN TRAYS TO REMOVE BUILD UP OR REPLACE.
FOUND OLD FOOD, GARBAGE, AND DIRT UNDERNEATH BAR EQUIPMENT IN THE FIRST FLOOR BAR. FOUND HEAVY DIRT AND DEBRIS BUILD UP ON THE FLOORS INSIDE THE WALK-IN COOLER AND FREEZER. MUST DETAIL CLEAN UNDERNEATH EQUIPMENT/SHELVING, AND SURROUNDING FLOORS.
FOUND A CRACKED FLOOR TILE IN FRONT OF THE FRYERS AND TILES MISSING GROUT NEAR THE REAR LOW TEMP DISH MACHINE. MUST REPAIR TILES AND REGROUT FLOORING.
OBSERVED EXCESSIVE CLUTTER AND UNNECESSARY ARTICLES STORED THROUGHOUT THE BASEMENT. MUST REMOVE ALL EQUIPMENT/ITEMS THAT ARE UNNECESSARY TO THE OPERATION, DETAIL CLEAN AREA, ORGANIZE ALL REMAINING ARTICLES AND STORE ON SHELVING 6" OFF THE FLOOR TO PROVIDE FLOOR ACCESSIBILITY FOR CLEANING.
FOUND MISSING CEILING TILES IN THE FIRST FLOOR KITCHEN. MUST REPLACE/PROVIDE.
FOUND INADEQUATE LIGHTING IN THE BASEMENT DRY STORAGE AREA AND IN THE 1ST FLOOR WALK-IN COOLER. MUST PROVIDE ADEQUATE LIGHTING.
OBSERVED NO PROOF OF ALLERGEN TRAINING ON SITE. MUST PROVIDE PROOF OF ALLERGEN TRAINING FOR ALL CHICAGO CERTIFIED FOOD MANAGERS.
