MUST ELIMINATE GAPS BETWEEN FLOOR TILES UNDER DRY STORAGE WHERE PARTICULATE MATTER IS ACCUMULATING AND MAINTAIN FLOORS TO BE SMOOTH AND EASILY CLEANABLE. MUST INSTALL COVING AROUND WALLS OF FOOD PREP AREA: AROUND 3 COMPARTMENT SINK, HAND SINK, DRY STORAGE, ETC.
