Arrange food properly to avoid contamination - raw beef stored above sauces.
Clean and sanitize inside ice machine and microwaves.
Date mark and label all food held over one day.
Do not use cardboard as a liner. Do not use wood block for chopping lamb.
Cover all food in WIC.
Keep all utensils inverted or covered.
Label all bulk containers.
Clean vent hoods, cooler gaskets, WIC & WIF shelves
Re- caulk hand sink
Provide Food Handler Certificates for all employees.
