All dishwashing machines must be of a type that complies with all requirements of the plumbing section of the Municipal Code of Chicago and Rules and Regulation of the Board of Health. DISHWASHING FACILITIES NOT PROPERLY MAINTAINED. OBSERVED STAFF USING A TWO COMPARTMENT SINK TO WASH RINSE AND SANITIZE DISHES DUE TO HAVING THE DISHWASHING MACHINE OUT OF ORDER. INSTRUCTED TO REPAIR DISHWASHING MACHINE OR INSTALL A PROPERLY DESIGNED THREE COMPARTMENT SINK. SERIOUS CITATION GIVEN 7-38-030

All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. REMOVE TIN FOIL FROM THE TABLE UNDER THE COOKING EQUIPMENT.

The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. REPLACE THE BROKEN AND MISSING COVING IN THE PREP AREAS WHERE NEEDED.

DISHMACHINE IS NOT WORKING PROPERLY. INSTRUCTED TO REPAIR SAME. THE SPRAYER BY THE TWO COMPARTMENT SINK IS IN POOR REPAIR. INSTRUCTED TO REPAIR OR REPLACE SAME.
