DISHWASHING FACILITIES NOT PROPERLY MAINTAINED. OBSERVED STAFF USING A TWO COMPARTMENT SINK TO WASH RINSE AND SANITIZE DISHES DUE TO HAVING THE DISHWASHING MACHINE OUT OF ORDER. INSTRUCTED TO REPAIR DISHWASHING MACHINE OR INSTALL A PROPERLY DESIGNED THREE COMPARTMENT SINK. SERIOUS CITATION GIVEN 7-38-030
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. REMOVE TIN FOIL FROM THE TABLE UNDER THE COOKING EQUIPMENT.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. REPLACE THE BROKEN AND MISSING COVING IN THE PREP AREAS WHERE NEEDED.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. DISHMACHINE IS NOT WORKING PROPERLY. INSTRUCTED TO REPAIR SAME. THE SPRAYER BY THE TWO COMPARTMENT SINK IS IN POOR REPAIR. INSTRUCTED TO REPAIR OR REPLACE SAME.
