INSTRUCTED TO PROVIDE AT LEAST ONE INTERNAL AMBIENT AIR THERMOMETER IN A CONSPICUOUS AND EASILY-VIEWABLE LOCATION IN ALL EQUIPMENT USED TO COLD-HOLD TCS FOOD ITEMS AND MAINTAIN AT ALL TIMES.
OBSERVED BULK DRY FOOD CONTAINERS IN THE REAR DRY STORAGE AREA (ADJACENT TO WALK-IN COOLER) NOT LABELED WITH THE COMMON NAME OF THE FOOD. INSTRUCTED TO LABEL ALL BULK DRY FOOD CONTAINERS WITH THE COMMON NAME OF THE FOOD STORED AND MAINTAIN.
OBSERVED INSECT CONTROL DEVICE INSTALLED DIRECTLY ABOVE CLEAN EQUIPMENT AND FOOD CONTAINERS IN THE FRONT KITCHEN AREA. INSTRUCTED TO RELOCATE INSECT CONTROL DEVICE SUCH THAT IT DOES NOT POSE RISK OF CONTAMINATION OF FOOD, CLEAN EQUIPMENT, OR UTENSILS AND MAINTAIN.
OBSERVED NONFOOD-CONTACT SURFACES OF SHELVING THROUGHOUT THE REAR KITCHEN AREA LINED WITH CARDBOARD AND ALUMINUM FOIL. INSTRUCTED TO REMOVE ALUMINUM FOIL AND CARDBOARD AND MAINTAIN NONFOOD-CONTACT SURFACES OF EQUIPMENT SMOOTH AND EASILY-CLEANABLE.
OBSERVED NO BACKFLOW PREVENTION DEVICE INSTALLED IN THE REAR AREA UTILITY/MOP SINK. INSTRUCTED TO PROVIDE BACKFLOW PREVENTION DEVICE AT UTILITY SINK TO PREVENT BACKFLOW OF SOILED WATER INTO PLUMBING SYSTEM AND MAINTAIN.
