OBSERVED THE FOLLOWING EQUIPMENT STORED THROUGHOUT PREP AREA IN NEED OF CLEANING ON INTERIOR AND EXTERIOR SURFACES OF COOLING UNITS, CONTAINERS INGREDIENT DOUGH MAKERS, FRYERS, WOKS, RICE COOKERS, PREP TABLES AND SHELVING RACKS. INSTRUCTED TO CLEAN, SANITIZE AND MAINTAIN AS REQUIRED.
OBSERVED OUTSIDE GREASE RECEPTACLE OBSERVED WITH MODERATE BUILDUP PRESENT DURING TIME OF INSPECTION. INSTRUCTED TO PROVIDE MORE FREQUENT SERVICING, AND CLEAN SURFACES IN ORDER TO PREVENT ATTRACTION TO PEST.MUST MAINTAIN RECEPTACLE

OBSERVED FLOOR TO WALL JUNCTURES IN BASEMENT PREP AREA IN DISREPAIR AND OR MISSING. INSTRUCTED TO REMOVE GREASE AND ACCUMULATED DIRT BUILD UP, REPLACE AND MAINTAIN.
OBSERVED BASMENT PREP AREA FLOOR WITH EXCESSIVE STICKY RESIDUE THROUGHOUT AND A HEAVY ACCUMULATION OF BLACK BUILD UP. SURFACES ARE NOT SMOOTH AND EASILY CLEANABLE , INSTRUCTED TO PROVIDE AND MAINTAIN AS REQUIRED.
