OBSERVED PLASTIC FOOD STORAGE CONTAINERS USED TO STORE CROUTONS WITH CRACKS IN THE PLASTIC. MANAGEMENT INSTRUCTED TO REPLACE ALL CRACKED FOOD STORAGE CONTAINERS.
CLEAN THE TOP OF THE DISHWASHING MACHINE IN THE DISHWASHING AREA, WIRE STORAGE RACKS IN THE WALK-IN COOLER, POTATO CUTTER MOUNTED TO THE PREP TABLE, PREP TABLES AND STORAGE SHELVES THROUGHOUT THE FOOD PREP AREA, AND INTERIOR OF PREP COOLERS.
OBSERVED THE EXPOSED HAND WASHING SINK BEHIND THE BASEMENT BAR TO BE SLOW DRAINING. MANAGEMENT INSTRUCTED TO REPAIR SO THAT THE SINK DRAINS PROPERLY.
CLEAN THE FLOOR OF THE WALK-IN FREEZER.
