All food not stored in the original container shall be stored in properly labeled containers. MUST LABEL AND DATE ALL PREPARED FOODS IN THE COOLERS.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN THE INTERIOR OF THE ICE CREAM FREEZER, WIRE RACKS IN THE BASEMENT WALK-IN COOLER.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. OBSERVED GROUT MISSING BETWEEN THE FLOOR TILES IN THE DISHWASH AREAS. MUST REGROUT THE FLOOR WHERE NECESSARY TO PREVENT INSECT ACTIVITY.
The walls and ceilings shall be in good repair and easily cleaned. OBSERVED CHIPPED PAINT ON THE CEILING ABOVE THE DISHWASH AREA. MUST SCRAPE AND REPAINT OR COVER WITH A CLEANABLE SURFACE. REPAINT THE DISCOLORED CEILING AREA BETWEEN THE PREP AREA AND THE DISHWASH AREA.
