The walls and ceilings shall be in good repair and easily cleaned. REPLACE BROKEN AND MISSING WALL TILES FROM THE PREP AREA WALLS. SEAL ALL OF THE WALL OPENINGS IN THE MOP CLOSET ROOM. All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. PROVIDE A METAL STEM THERMOMETER TO TAKE FOOD TEMPERATURES.
