All food not stored in the original container shall be stored in properly labeled containers. MUST LABEL AND DATE PREPARED FOODS IN THE COOLERS.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. REPAIR OR REPLACE THE DOOR OF THE CHEST FREEZER WITH EXPOSED INSULATION.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN THE VENTILATION HOODS IN BOTH PREP AREAS. DETAIL CLEAN AND REPAINT THE STORAGE SHELVES IN THE REAR PREP AREA.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. REPLACE ANY BROKEN OR MISSING FLOOR TILES IN THE PREP AREAS.
The walls and ceilings shall be in good repair and easily cleaned. SCRAPE AND REPAINT THE WALLS AROUND THE STORAGE SHELVES AND THE CEILING ABOVE THE REAR PREP AREA.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. REPLACE THE CRACKED LIGHT SHIELDS ABOVE THE 3 COMPARTMENT SINK.
REPAIR THE WATER LEAK AT THE 3 COMPARTMENT SINK.
