All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Some dust under fryer cabinets at bottom; remove.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Clean floors under/around equipment in kitchen and storage.
The walls and ceilings shall be in good repair and easily cleaned. Replace all damaged ceiling tiles in dining area and kitchen. Seal any holes in walls and/or cracks/crevices where needed (by hot water tank, under steam table). Remove dust from light shields where needed. Clean walls around/behind cooking equipment where needed.
