All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. MUST CLEAN BOTTOM CABINETS OF FRYERS TO REMOVE DUST AND GREASE. CLEAN SURFACE UNDER STOVE AND GRILL AND EXTERIOR OF FRYERS WHERE NEEDED. REPAIR OR REPLACE LOOSE RUBBER GASKETS AT DOORS OF COOLER ACROSS FROM STOVE.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. CLEAN FLOOR DRAINS UNDER SINKS WHERE NEEDED. CLEAN FLOORS UNDER COOKING EQUIPMENT TO REMOVE GREASE AND FOOD PARTICLES.
The walls and ceilings shall be in good repair and easily cleaned. CLEAN WALLS AROUND AND BEHIND EQUIPMENT WHERE NEEDED AND REMOVE DUST FROM CEILING VENTS IN KITCHEN WHERE NEEDED.
