All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair.MUST PROVIDE A SPLASHGUARD AT EXPOSED HANDSINK IN PREP AREA,Cutting boards with deep, dark grooves must be sanded/bleached or replaced.
The walls and ceilings shall be in good repair and easily cleaned.EXPOSED BRICK EAST WALLS ALONG DRY FOOD/MULTI-USE PIECES OF EQUIPMENT/MIXER AREAS--MUST BE SMOOTH,EASILY CLEANABLE SURFACES.
Toilet rooms shall be completely enclosed and shall be vented to the outside air or mechanically ventilated.TOILET ROOM DOOR MUST BE SELF CLOSING.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health.MUST REPAIR WATER LEAKING BENEATH 2 COMP SINK AREA,ELECTRIC (COOKTEK) INDUCTION COOKER IN KITCHEN MUST BE UNDER VENTILATION, WHEN THE EQUIPMENT IS MORE THAN 7.5 KILOWATTS.
