OBSERVED NO CERTIFIED FOOD MANAGER PRESENT WHILE TCS FOODS (COFFEE AND SANDWICHES) WERE BEING PREPARED AND SERVED. MANAGEMENT INSTRUCTED THAT A CERTIFIED FOOD MANAGER MUST BE PRESENT AT ALL TIMES WHILE TCS FOODS ARE BEING PREPARED OR SERVED. PRIORITY FOUNDATION VIOLATION 7-38-012. CITATION ISSUED.
OBSERVED THE HOT WATER ABOVE 120F AT THE EXPOSED HAND WASHING SINK IN THE FRONT FOOD PREP AREA. THE COLD WATER HANDLE WAS STRIPPED. ALSO OBSERVED THE EXPOSED HAND WASHING SINK IN THE REAR PREP/DISHWASH AREA WITH HOT WATER ABOVE 120F. THE COLD WATER HANDLE WAS ALSO STRIPPED BUT THE COLD WATER COULD BE TURNED OFF AND ON AT THE VALVE UNDER THE SINK. THE VALVE WAS TURNED OFF AT THE TIME OF THE INSPECTION. MANAGEMENT INSTRUCTED TO REPAIR THE HAND WASHING SINKS AND PROVIDE HOT AND COLD RUNNING WATER SO THAT THE WATER TEMPERATURE CAN BE ADJUSTED FOR PROPER HAND WASHING BETWEEN 100-120F. CLEAN THE TOP OF THE CONVECTION OVEN AND BOTTOM SHELF OF THE PREP TABLE IN THE REAR FOOD PREP AREA.
