INSTRUCTED TO DETAIL CLEAN EXTERIOR OF GREASE TRAP, WOK COOKING STATION,PREP TABLES, FOOD STORAGE CONTAINERS, INTERIOR AND EXTERIOR OF THE CHEST FREEZER AND PREP COOLER, AND DEEP FRYER.
INSTRUCTED TO DETAIL CLEAN AND MAINTAIN FLOORS WITH SPILLED GREASE AND DRIED FOOD DEBRIS ALONG THE WALLS AND IN ALL CORNERS THROUGHOUT KITCHEN COOKING AREA ESPECIALLY UNDER AND AROUND COOKING EQUIPMENTS AND DETAIL CLEAN WALLS IN KITCHEN TO REMOVE GREASE SPLASHED DEBRIS.
OBSERVED NO FOOD HANDLER CERTIFICATES PROVIDED ON THE PREMISES.MUST SHOW PROOF OF TRAINING FOR ALL FOOD HANDLING EMPLOYEES.
ALLERGEN TRAINING IS REQUIRED FOR ALL EMPLOYEES THAT HAVE A CITY OF CHICAGO FOOD SANITATION CERTIFICATE. INSTRUCTED TO COMPLETE TRAINING AND MAINTAIN CERTIFICATE ON SITE.
