Operator voluntarily discarded denatured foods during inspection. Instructed must keep all potentially hazardous foods @ 40F or less, or 140F or more at all times. Critical violation 7-38-005(a).
Observed stains on wall from leak in ceiling, in rear of basement prep. Ceiling tile not inserted to make tight fitting. Observed visible gap in ceiling while repairs are being made. Must clean and sanitize stains on walls from leak, and properly insert ceiling tile to prevent pest entry. Must maintain same.
Observed plastic wrap being used as a mean of repair on floor drain, under 3 compartment sink in basement prep. Must remove. Must repair drain with proper plumbing materials. All surfaces must be smooth and easily cleanable. Must maintain same.
