Observed slight food build up on floors throughout basement kitchen/prep area. Instructed manager to detail clean. Maintain at all times.

POTENTIALLY HAZARDOUS FOOD MEETS TEMPERATURE REQUIREMENT DURING STORAGE, PREPARATION DISPLAY AND SERVICE

Found the following potentially hazardous foods at improper temperatures in the 1 door cooler in the basement prep: 12lbs of egg salad @ 49.3F; 7lbs of cooked sweet potatoes @ 51.9F; 2 lbs of hard boiled, unshelled eggs @ 51.9F; 14lbs of egg soufflé @ 44.6F. Operator voluntarily discarded denatured foods during inspection. Instructed must keep all potentially hazardous foods @ 40F or less, or 140F or more at all times. Critical violation 7-38-005(a).

WALLS, CEILINGS, ATTACHED EQUIPMENT CONSTRUCTED PER CODE: GOOD REPAIR, SURFACES CLEAN AND DUST-LESS CLEANING METHODS

Observed stains on wall from leak in ceiling, in rear of basement prep. Ceiling tile not inserted to make tight fitting. Observed visible gap in ceiling while repairs are being made. Must clean and sanitize stains on walls from leak, and properly insert ceiling tile to prevent pest entry. Must maintain same.

VENTILATION: ROOMS AND EQUIPMENT VENTED AS REQUIRED: PLUMBING: INSTALLED AND MAINTAINED

Observed plastic wrap being used as a mean of repair on floor drain, under 3 compartment sink in basement prep. Must remove. Must repair drain with proper plumbing materials. All surfaces must be smooth and easily cleanable. Must maintain same.
