All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. OBSERVED A BUILDUP OF GREASE ON THE STOVE NEXT TO THE DEEP FRYER AND THE DEEP FRYER. MUST DETAIL CLEAN EQUIPMENT.
The walls and ceilings shall be in good repair and easily cleaned. OBSERVED PEELING PAINT ON THE CEILING TILES ABOVE THE DISHWASH AREA. MUST SCRAPE AND REPAINT OR REPLACE CEILING TILES. OBSERVED MISSING BASEBOARD TILES IN THE PREP AREA, ESPECIALLY IN THE CORNERS. MUST REPLACE MISSING BASEBOARD TILES.
Toilet rooms shall be completely enclosed and shall be vented to the outside air or mechanically ventilated. MUST PROVIDE WORKING VENTILATION FOR ALL RESTROOMS.
REPLACE THE SPRAY HOSE AT THE SCRAPE SINK NEXT TO THE DISHMACHINE AND REPLACE WITH FOOD GRADE EQUIPMENT AND ONE WHICH DOES NOT FALL BELOW THE FLOOD RIM LEVEL OF THE SINK.
Molluscan shell stock shall be obtained in containers bearing legible source identification tags or labels. OBSERVED SHELLFISH (MUSSELS) IN THE WALK-IN COOLER STORED WITHOUT THE SHELLFISH TAG. MANAGEMENT INSTRUCTED THAT SHELLFISH TAGS MUST BE KEPT WITH THE PRODUCT UNTIL SOLD, THEN KEPT FOR AN ADDITIONAL 90 DAYS AFTER. MANAGEMENT DISCARDED 7# OF MUSSELS WORTH $20. CRITICAL VIOLATION 7-38-005 (B-2)
The area outside of the establishment used for the storage of garbage shall be clean at all times and shall not constitute a nuisance. OBSERVED THE GROUND AROUND THE GARBAGE AND GREASE DUMPSTERS WITH A BUILDUP OF GREASE, FOOD LITTER AND GARBAGE. THE GARBAGE CAN WAS ALSO OVERFLOWING WITH WASTE AND GARBAGE. MANAGEMENT HAD THE GARBAGE REMOVED INTO THE OTHER GARBAGE CANS. MANAGEMENT INSTRUCTED TO MAINTAIN THE AREA CLEAN AT ALL TIMES. SERIOUS VIOLATION 7-38-020.

All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. MUST PROVIDE A THERMOMETER INSIDE OF THE SUSHI COOLER.
