OBSERVED 2 VACUUM PACKAGING MACHINES STORED IN THE FOOD PREP AND DRY STORAGE AREAS AND VACUUM PACKAGED MEATS (PORK, CHICKEN, FISH, AND PROSCIUTTO) STORED IN THE WALK-IN FREEZER WITHOUT A CDPH APPROVED HACCP PLAN. MANAGEMENT INSTRUCTED TO HAVE AN APPROVED HACCP PLAN BEFORE VACUUM PACKAGING ANY FOODS. PRIORITY FOUNDATION VIOLATION 7-38-005.
OBSERVED NO CDPH-APPROVED HACCP PLAN ON THE PREMISES TO VACUUM PACKAGE MEATS. MANAGEMENT INSTRUCTED TO PROVIDE AN APPROVED HACCP PLAN BEFORE VACUUM PACKAGING ANY FOODS. PRIORITY FOUNDATION VIOLATION 7-38-005.
OBSERVED A HOLE IN THE DRYWALL IN THE DISHWASHING AREA OF THE KITCHEN. MANAGEMENT INSTRUCTED TO REPAIR THE DRYWALL IN THIS AREA.
OBSERVED A FOOD-HANDLING EMPLOYEE PREPARING FOOD IN THE KITCHEN WITHOUT A FOOD HANDLER TRAINING CERTIFICATE. MANAGEMENT INSTRUCTED THAT ALL FOOD HANDLING EMPLOYEES MUST SHOW PROOF OF TRAINING.
OBSERVED THE CERTIFIED FOOD MANAGER WITHOUT A VALID ALLERGEN TRAINING CERTIFICATE. MANAGEMENT INSTRUCTED THAT ALL CERTIFIED FOOD MANAGERS MUST SHOW PROOF OF ALLERGEN TRAINING.
