THE FOLLOWING NOT CLEAN- OBSERVED FOOD DEBRIS ON PREP AREA SHELVES, SLIGHT LIME BUILD UP INISDE ICE MACHINE, INTERIOR OF FRYERS. MUST CLEAN AND MAINTAIN ALL UNCLEAN EQUIPMENT.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. OBSERVED STANDING WATER ON FLOOR(BY FLOOR DRAIN) IN DISHMACHINE ROOM AND FOOD DEBRIS ON FLOOR IN PREP AREA UNDER AND AROUND COOKING EQUIPMENT. MUST DETAIL CLEAN FLOOR/KEEP FLOOR DRY THROUGOUT PREP AND DISHMACHINE AREA.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. PREP AREA HANDWASH BOWL DRAINING SLOWLY AND PREP AREA 3-COMPARTMENT SINK PIPE LEAKING. MUST REPAIR AND MAINTAIN SINKS.
