OBSERVED IN-USE KNIVES STORED BETWEEN COUNTERTOPS AND CUTTING BOARDS ALONG THE FRONT SERVICE/REAR KITCHEN AREAS. INSTRUCTED TO STORE KNIVES AND OTHER IN-USE UTENSILS ON A CLEAN, SANITIZED SURFACE IN BETWEEN USES TO PREVENT CONTAMINATION BY THE ENVIRONMENT AND MAINTAIN.
OBSERVED INTERIOR NONFOOD-CONTACT SURFACES OF MICROWAVES IN THE REAR KITCHEN AREA TO BE SOILED WITH DRIED FOOD DEBRIS. INSTRUCTED TO CLEAN NONFOOD-CONTACT SURFACES OF EQUIPMENT AT ADEQUATE FREQUENCY TO PREVENT BUILD UP OF DRIED FOOD DEBRIS AND OTHER SOILS AND MAINTAIN.
