OBSERVED DARK DEEP GROOVES AND STAINS ON CUTTING BOARD LOCATED ON TOP OF 2 DOOR PREP COOLER, IN FRONT COOK STATION. INSTRUCTED MANAGER TO RESURFACE AND OR REPLACED TO ENSURE ITS SURFACE IS SMOOTH AND EASILY CLEANABLE. OBSERVED CAULKING IN POOR REPAIR ALONG LEFT SIDE OF THREE COMPARTMENT SINK AND BOTH EXPOSED HAND SINKS IN REAR PREP AREA. INSTRUCTED MANAGER TO REPAIR AND MAINTAIN ABOVE, AT ALL TIMES.
OBSERVED STANDING WATER ON BOTTOM INTERIOR SURFACE OF JORDAN TWO-DOOR COOLER IN COOK PREP AREA. INSTRUCTED MANAGER TO REPAIR AND MAINTAIN AT ALL TIMES. OBSERVED EXCESSIVE FOOD, DUST AND DEBRIS ENCRUSTED ON THE FOLLOWING AREAS: -ALL WIRE SHELVING UNITS LOCATED, IN COOK LINE AREA. -INSIDE ALL FRONT 2 DOOR COOLERS, IN COOK LINE AREA. INSTRUCTED MANAGER TO DETAIL CLEAN AND MAINTAIN AT ALL TIMES.
