All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. Prep area reach in coolers door rubber gaskets in poor repair, ripped. Must replace or repair damaged door gaskets.

Observed accumilated food debris on lower side of dishwash area drainboards/prep tables, dust build up on compressors in walk in coolers. Must clean and maintain all unclean equipment.

Observed damaged floor tiles at lower level prep area and food build up on floor under cooking equpment.Must clean interior of all unclean floor drains and detail clean floor under and around cooking equipment also must repair all damaged floor tiles.
