A THERMOMETER IS NOT PROVIDED IN THE COLD HOLDING UNITS. COLD/HOT HOLDING EQUIPMENT USED FOR TIME/TEMPERATURE CONTROL FOODS SHALL HAVE AT LEAST ONE THERMOMETER IN AN EASILY VIEWED LOCATION.
OBSERVED RAW WOOD USED AS SHELVING ABOVE STAND-UP FREEZER IN THE DISH AREA. THE FACILITY MUST PROVIDE A SMOOTH, EASILY CLEANABLE, AND NON-ABSORBANT SURFACE.
