MANAGER PLUNGED SAID COMPARTMENT WITH PLUNGER SEVERAL TIMES TO UNCLOG DRAIN, OBSERVED WASTE WATER LEAKING FROM UNDER FIRST AND THIRD COMPARTMENT OF SINK AT PIPING WHEN MANAGER WAS PLUNGING FIRST COMPARTMENT SINK TO RELEASE WASTE WATER. MANAGER CALLED SEVERAL PLUMBERS TO REPAIR SINK. PLUMBER REPAIRED SINK-INSTALLED NEW GREASE TRAP AND REPLACED OLD PIPING WITH NEW PIPING UNDER THREE COMPARTMENT SINK. SUPERVISOR NOTIFIED. CRITICAL 7-38-030 ISSUED.

CLEAN BULK FOOD CONTAINERS, PREP TABLE BOTTOMS, WALLS BEHIND COOKING EQUIPMENT, UNDER, AROUND LARGE OVEN, INTERIOR OF HAND WASH SINK, THREE COMPARTMENT SINK, STORAGE AND PREP SHELVES, INTERIOR OF UNUSED REFRIGERATION UNITS,LIGHT SHIELDS AT REAR PREP AREA, TOILET ROOM,AND VENTILATION FAN COVER AT WINDOW.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. DETAIL CLEAN FLOORS THROUGHOUT 1ST. FLOOR AND BASEMENT, ESPECIALLY ALONG WALL BASE. KEEP FLOORS DRY IN BASEMENT STORAGE AREA. REPLACE CRACKED FLOOR TILES AND OPENING AT FLOOR IN FRONT OF LARGE OVEN IN PREP AREA.
The walls and ceilings shall be in good repair and easily cleaned. SEAL ALL OPENINGS AT WALL AND CEILING AS NEEDED THROUGHT FIRST FLOOR PREP AREA AND TOILET ROOM. PAINT DISCOLORED, STAINED CEILING AT REAR PREP AREA AND BY REAR WALK-IN COOLER.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. PROVIDE LIGHT SHIELDS WITH END CAPS FOR LIGHT FIXTURES ABOVE PREP AREA, DISH WASHING AREA, AND INSIDE WALK-IN COOLER. PROVIDE LIGHTING FOR BASEMENT STORAGE AREA. REPLACE CRACKED LIGHT SHIELD ABOVE PREP TABLE AT FRONT PREP AREA.
PROVIDE DRAIN RACK AND OR DRAIN BOARD AT THREE COMPARTMENT SINK. REPAIR LEAKS AT PIPING UNDER THREE COMPARTMENT SINK.
