OBSERVED CAKE SLICES BAKED ON-SITE SOLD IN TO-GO CONTAINERS MISSING IDENTIFYING INFORMATION SUCH AS THE NAME OF THE RETAIL FOOD ESTABLISHMENT, THE ADDRESS OF THE ESTABLISHMENT, AND A LIST OF BASIC INGREDIENTS. INSTRUCTED TO PROVIDE ALL OF THE LABELING ELEMENTS FOR TO-GO FOOD ITEMS AND MAINTAIN AT ALL TIMES.

OBSERVED NONFOOD-CONTACT SURFACES (UNDERSIDE, BRUSH STORAGE BIN) OF BAR AREA 3-COMPARTMENT SINK TO BE VISIBLY SOILED WITH DRIED FOOD DEBRIS AND OTHER SOILS. INSTRUCTED TO CLEAN NONFOOD-CONTACT SURFACES OF EQUIPMENT AT ADEQUATE FREQUENCY TO PREVENT BUILD UP OF DRIED FOOD DEBRIS AND OTHER SOILS AND MAINTAIN.
MUST NOT USE TINFOIL AS LINER FOR EQUIPMENT OR SURFACES OF THE PASS THROUGH WINDOW FROM THE COOKS LINE TO THE REAR PREP. MUST BE SMOOTH, CLEANABLE SURFACE.----NOTED DIRTY HAND WASHING SINK AT THE DISHWASHING AREA. MUST CLEAN AND MAINTAIN.
