NO CITY OF CHICAGO CERTIFIED FOOD MANAGER WAS PRESENT WHILE POTENTIALLY HAZARDOUS FOODS (RICE AT 172.2F) WERE BEING PREPARED AND SERVED. DEFROST AND MAINTAIN THE INTERIOR OF THE 1 DOOR FREEZER. OBSERVED FROZEN FOODS STORED IN PLASTIC GROCERY BAGS AND CARDBOARD BOXES IN THE WALK-IN FREEZER. MANAGEMENT INSTRUCTED TO USE PROPER FOOD GRADE STORAGE BAGS AND CONTAINERS ONLY.
DETAIL CLEAN THE FOLLOWING ITEMS: PREP TABLES, STEAM TABLE AND SHELVES ABOVE THE STEAM TABLE, INTERIOR OF PREP COOLERS, LIGHT SHIELDS, STOVE, DEEP FRYERS, MICROWAVE AND WOK STATION.
OBSERVED FOODS STORED IN BAGS ON THE FLOOR OF THE WALK-IN FREEZER. MANAGEMENT INSTRUCTED TO STORE ALL FOODS AT LEAST 6" OFF OF THE FLOOR.
CLEAN THE WALLS OF THE FOOD PREP AREA. CLEAN THE DUST ON THE CEILING TILES. CLEAN THE GREASE ON THE VENTILATION HOOD.
REMOVE ALL OF THE EMPTY CANS UNDERNEATH THE 3 COMPARTMENT SINK.
