OBSERVED LOW-TEMPERATURE WAREWASHING MACHINE LOCATED IN THE BASEMENT KITCHEN'S DISH AREA NOT PROPERLY SANITIZING. THE SANITIZING RESIDUAL CONCENTRATION WAS OBSERVED AT 0 PPM AT THE TIME OF INSPECTION. INSTRUCTED PERSON IN CHARGE TO REPAIR TO MEET SANITIZING REQUIREMENTS OF 50-100PPM. THE DISH MACHINE WAS SERVICED BY ECOLAB DURING THE INSPECTION. PRIORITY VIOLATION #7-38-025. CITATION ISSUED.
OBSERVED TCS FOODS HELD AT IMPROPER INTERNAL TEMPERATURES IN THE FRONT PREP COLD HOLDING UNIT, SUCH AS 2 LBS OF SCALLOPS AT 49.2F, 2 LBS OF MASHED POTATOES AT 50.8F, AND 2 LBS OF MILK AT 51.5F. THE MANAGER DISCARDED AND DENATURED A TOTAL OF 8LBS AT A COST OF $100. ALL COLD TCS FOOD MUST MAINTAIN 41F OR BELOW. PRIORITY VIOLATION. CITATION ISSUED 7-38-005.
OBSERVED MILK CRATES BEING USED AS SHELVING THROUGHOUT THE PREP AND STORAGE AREAS. MUST REMOVE AND PROVIDE SHELVING 6" OFF THE FLOOR AND PROVIDE FLOOR ACCESSIBILITY TO ENSURE ADEQUATE FACILITY CLEANING.
OBSERVED MISSING AND DAMAGED FLOOR TILES IN THE SECOND-FLOOR RESTROOM. INSTRUCTED TO REPAIR TO CREATE A SMOOTH AND EASILY CLEANABLE SURFACE. MUST MAINTAIN AT ALL TIMES.
