The area outside of the establishment used for the storage of garbage shall be clean at all times and shall not constitute a nuisance. INSTRUCTED TO CUT GRASS AND TALL WEEDS IN REAR YARD OF BUILDING TO AVOID POSSIBLE RODENT HARBORAGE. ALSO CLEAN UNDER STAIRS AT REAR SIDE OF BUILDING TO REMOVE TRASH OBSERVED.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. MUST CLEAN INTERIOR BOTTOMS OF FRYERS TO REMOVE GREASE AND DUST NOTED. ALSO CLEAN HOOD CANOPY ABOVE FRYERS TO REMOVE DUST NOTED.
The walls and ceilings shall be in good repair and easily cleaned. REPLACE DAMAGED/STAINED CEILING TILES WHERE NEEDED.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. MUST INSTALL A UTILITY SINK ON PREMISES FOR THE DISPOSAL OF WASTE WATER.
All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. INSTRUCTED TO PROVIDE THERMOMETERS FOR THE INTERIORS OF ALL COOLERS AND FREEZERS.
