All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. Some cutting boards with deep/dark grooves must be sanded/bleached, to make surfaces smooth/easily cleanable.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Interior panel of ice machine cleaning.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Floors under dry storage shelves, around grease trap & mop sink area need cleaning also.
The walls and ceilings shall be in good repair and easily cleaned. Walls around dishmachine must be cleaned or re-sealed due to food stains. Dust & grease on filters & other attachments to the interior of the hood above the cooking equipment must be kept clean.
