ALSO OBSERVED SAME FOOD HANDLER GRAB TOAST, FROM TOASTER WITH BARE HAND CONTACT AT TIME OF INSPECTION. INFORMED MANAGER THAT BARE HAND CONTACT WITH READY TO EAT FOOD IS NOT ALLOWED. USE BARRIERS SUCH AS TONGS OR SINGLE GLOVES, TO AVOID BARE HAND CONTACT WITH READY TO EAT FOODS. MANAGER CORRECTED VIOLATION DURING INSPECTION. CRITICAL VIOLATION 7-38-010(A)
OBSERVED GYRO MEAT (BEEF/LAMB) ON SPIT AND EXPOSED TO AMBIENT ROOM TEMPERATURE, WITHOUT HEAT ON. INSTRUCTED ONCE POTENTIALLY HAZARDOUS FOODS ARE ON THE SPIT (VERTICAL BROILER) THE HEAT MUST BE ON CONTINUOUSLY. COOKING PROCESS MUST BE CONTINUOUS AND NOT INTERMITTENT AND NO LONGER THAN 4 HOURS. OBSERVED 12 BOTTLES OF NESTLE PURE LIFE WATER, STORED IN ICE BIN, LOCATED BEHIND FRONT COUNTER, IN DIRECT CONTACT WITH ICE USED FOR PUBLIC CONSUMPTION. INFORMED MANAGER THAT ICE USED IN THIS PARTICULAR ICE BIN SHOULD ONLY BE USED FOR CONSUMPTION, NOT BEVERAGE STORAGE. MANAGER CORRECTED BOTH VIOLATIONS DURING INSPECTION.
