ALSO OBSERVED SAME EMPLOYEE TAKING DIRTY WIPING CLOTH STORED ON TOP OF PREP CUTTING BOARD AND WIPING OFF SUSHI PREP KNIFE, WIPING OFF DIRTY HANDS AND WIPING DOWN DIRTY CUTTING BOARD THEN LEAVING WIPING CLOTH ON TOP OF CUTTING BOARD FOR FURTHER USE. INSTRUCTED TO PROVIDE BUCKET WITH A SANITIZING SOLUTION FOR WIPING CLOTHS AND THAT THE HAND WASHING SINK IS FOR HAND WASHING PURPOSES ONLY. MUSHROOMS DISCARDED.
