OBSERVED BUILD UP OF ENCRUSTED GREASE DEPOSITS ON FOOD- AND NONFOOD-CONTACT SURFACES OF OVENS IN THE BASEMENT KITCHEN AREA. INSTRUCTED TO CLEAN FOOD- AND NONFOOD-CONTACT SURFACES OF COOKING EQUIPMENT AT ADEQUATE FREQUENCY TO PREVENT BUILD UP OF ENCRUSTED GREASE DEPOSITS AND MAINTAIN.
OBSERVED SOILED PLASTIC BAG USED AS DRAIN COVER/SPLASH GUARD AT THE 2ND FLOOR REAR BAR AREA FLOOR-MOUNTED DRAIN. INSTRUCTED TO REMOVE PLASTIC BAG AND REPLACE WITH PLUMBING FIXTURE THAT IS SMOOTH AND EASILY-CLEANABLE AND MAINTAIN ALL PLUMBING FIXTURES AS SMOOTH AND EASILY-CLEANABLE.
OBSERVED NO BACKFLOW PREVENTION DEVICE PROVIDED AT THE 2ND FLOOR REAR BAR AREA FLOOR-MOUNTED UTILITY SINK. INSTRUCTED TO PROVIDE BACKFLOW PREVENTION DEVICE AND MAINTAIN.
