OBSERVED SINGLE-USE PLASTIC BOWLS USED AS SCOOPS IN BULK DRY FOOD STORAGE BINS IN THE REAR KITCHEN AREA. INSTRUCTED TO REPLACE SINGLE-USE BOWLS WITH MULTI-USE UTENSILS WITH HANDLES TO PREVENT CONTAMINATION WHILE SCOOPING.
OBSERVED THE FOLLOWING NONFOOD-CONTACT SURFACES OF EQUIPMENT TO BE SOILED: 3-COMPARTMENT SINK DRAIN PLUGS SOILED WITH FOOD DEBRIS, INTERIOR CAVITY OF DEEP FRYER SOILED WITH GREASE. INSTRUCTED TO CLEAN NONFOOD-CONTACT SURFACES OF EQUIPMENT AT ADEQUATE FREQUENCY TO PREVENT BUILD UP OF SOIL AND MAINTAIN.
OBSERVED 3-COMPARTMENT SINK FAUCET ASSEMBLY TO BE IN POOR REPAIR, LOOSE FROM SINK BUT FUNCTIONAL. INSTRUCTED TO REPAIR OR REPLACE 3-COMPARTMENT SINK FAUCET ASSEMBLY AND MAINTAIN ALL PLUMBING FIXTURES IN FOOD REPAIR.
OBSERVED SEVERAL CITY OF CHICAGO CERTIFIED FOOD MANAGERS MISSING ALLERGEN AWARENESS TRAINING CERTIFICATES ON-SITE. INSTRUCTED TO PROVIDE ALL CITY OF CHICAGO CERTIFIED FOOD MANAGERS WITH ADDITIONAL ALLERGEN AWARENESS TRAINING AND MAINTAIN UPDATED CERTIFICATE(S) ON-SITE AT ALL TIMES FOR INSPECTOR REVIEW.
