PASS 5 violations
Observed several potentially hazardous foods, cooked potatoes, rice, etc. stored in 2-door True refrigerator, as well as all walk in coolers, without dates or labels. Informed manager that all items stored for more than 12 hours must have dates and labels. Instructed manager to provide dates and labels. Maintained at all times.
Observed excessive rust and chipped paint on all wire shelving racks in all 3 walk in cooler area. Instructed manager to remove rust, seal area and maintained at all times. Observed broken door gaskets on two-door true reach-in cooler in kitchen prep area across from expose hand sink. Instructed manager to remove and replace. Maintained at all times.
Observed excessive food and debris buildup on all wire shelving racks in all 3 walk in cooler areas. Instructed manager to detail clean area and maintained at all times.
Observed cracks and crevices throughout floor grouting in kitchen prep area and cook line area. Informed manager that all surfaces must be smooth and easily cleanable. And formatted it to seal Route 2 hours kitchen prep and cook line area. Maintain it all times.
Observed food stored on floor in walk in cooler #3, next to dish washing area. Instructed manager to elevate items in walk-in cooler at least 6 inches off the floor at all times. Must maintain.
