OBSERVED IMPROPER THAWING METHOD FOR TCS FOOD. FOUND TWO FROZEN, PACKAGES OF MEAT ON A SHEET TRAY BEING THAWED OUT AT ROOM TEMPERATURE. INSTRUCTED TO USE PROPER THAWING METHODS SUCH AS PLACING THE FOOD IN THE WALK-IN COOLER OVERNIGHT, OR UNDER COLD RUNNING WATER.
OBSERVED NO AMBIENT AIR THERMOMETER FOR THE HOT HOLDING UNIT IN THE FRONT PREP AREA. INSTRUCTED TO PROVIDE AND MAINTAIN.
OBSERVED THE LOWER SHELVES UNDER THE FOOD PREP TABLES WITH CRUMBS AND SLIGHT DEBRIS. INSTRUCTED TO CLEAN AND MAINTAIN.
