ALSO, OBSERVED THE FOLLOWING FOODS AT IMPROPER TEMPERATURES INSIDE OF THE WALK-IN COOLER: SAUSAGE PATTIES AT 49.7F, SAUSAGE LINKS AT 44.6F, JERK CHICKEN AT 45.5F, HAM AT 48.5F. OBSERVED EVIDENCE OF INFESTATION OF RODENT ACTIVITY THROUGHOUT THE PREMISES. APPROXIMATELY 300 MOUSE DROPPINGS WERE OBSERVED IN THE FOLLOWING AREAS: ALONG THE WALLS OF THE DINING ROOM, ON THE LOWER SHELF OF THE PREP TABLES IN THE FOOD PREPARATION AREA, ALONG THE WALLS AND IN THE CORNERS OF THE STORAGE ROOM AND DISHROOM, ALONG THE WALLS AND IN THE CORNERS IN THE DRY STORAGE ROOM AND ON THE STORAGE SHELVES, AND ON THE FLOOR OF THE WALK-IN COOLER. ALSO, OBSERVED APPROXIMATELY 50 LIVE FRUIT FLIES IN THE FOOD PREPARATION AREA, STORAGE ROOM AND DISHROOM. FLIES WERE OBSERVED ON THE WALLS IN THESE AREAS. ALSO, OBSERVED 2 LIVE COCKROACHES IN THE MEN'S CUSTOMER WASHROOM AND WOMEN'S EMPLOYEE WASHROOM. ADDITIONAL PEST CONTROL SERVICE IS NEEDED TO MINIMIZE OR ELIMINATE ALL PEST ACTIVITY. OUTSIDE GARBAGE AREA IS NOT MAINTAINED CLEAN. OBSERVED AN EXCESSIVE AMOUNT OF GARBAGE, FOOD DEBRIS AND LITTER ON THE GROUND SURROUNDING THE GARBAGE DUMPSTERS. ALSO, THE LIDS WERE NOT CLOSED ON THE DUMPSTERS. MANAGEMENT INSTRUCTED TO CLEAN AND MAINTAIN THE AREA SURROUNDING THE GARBAGE DUMPSTERS AND TO CLOSE THE LIDS WHEN NOT IN USE.
