OBSERVED HANDSINK IN KITCHEN PREP AREA WITH COLD WATER HANDLE NOT OPERABLE. INSTRUCTED TO CORRECT AND ENSURE SINK HAS HOT/COLD RUNNING WATER AT ALL TIMES.
5-402.12 NOTED THAT ALL SINKS IN WHICH FOOD, UTENSILS, AND EQUIPMENT SHALL BE CONNECTED TO ALSO HAVE A CATCH-BASIN OR BE EQUIPPED WITH AN APPROVED GREASE INTERCEPTOR. OBSERVED TWO ON SITE 3-COMPARTMENT WAREWASHING SINKS WITHOUT APPROVED GREASE TRAP. INSTRUCTED PERSON IN CHARGE TO OBTAIN, INSTALL AND MAINTAIN AT ALL TIMES.
