All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST REPAINT THE GREASE TRAP UNDER THE 3 COMPARTMENT SINK.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN THE FOLLOWING: INTERIOR OF PREP COOLERS (WIRE RACKS AND BOTTOM OF COOLERS), VENTILATION HOOD AND FILTERS, PREP TABLES, DUST ON UTENSIL HOLDER ABOVE PREP COOLER, DUST AND GREASE ON LIGHT SHIELD ABOVE DEEP FRYERS, STORAGE SHELVES AND CABINETS, DIRTY DISHES STORED UNDER PREP TABLE.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST DETAIL CLEAN THE FLOOR THROUGHOUT THE PREP AREA AND BASEMENT. THE FLOOR IN FRONT OF THE 3 COMPARTMENT SINK IN THE PREP AREA IS NOT LEVEL AND THERE ARE BROKEN FLOOR TILES. MUST LEVEL THE FLOOR AND REPALCE THE BROKEN FLOOR TILES.
The walls and ceilings shall be in good repair and easily cleaned. DETAIL CLEAN AND REPAINT THE WALLS OF THE PREP AREA, ESPECIALLY ABOVE THE 3 COMPARTMENT SINK.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. OBSERVED AN UNSHIELDED LIGHT BULB AT THE VENTILATION HOOD ABOVE THE GRILL AREA. MUST INSTALL A LIGHT SHIELD.
