INSTRUCTED NOT TO USE UNTIL EQUIPMENT IS ABLE TO MAINTAIN FINAL RINSE TEMPERATURE AND REINSPECTED BY CDPH. PRIORITY VIOLATION, 7-38-025. MANAGER UNABLE TO TURN MACHINE FULLY ON AND GET IT TO FUNCTION PROPERLY BY END OF INSPECTION.
OBSERVED PEELING/TORN PROTECTIVE PLASTIC LAYERS ON THE EXTERIOR OF THE DISH KACHINE, SHELVES IN THE PREP AREA, AND THE SIDES OF THE MINI TOASTER. INSTRUCTED MANAGER TO REMOVE AND PROVIDE SMOOTH AND EASILY CLEANABLE SURFACES.
OBSERVED NO BACKFLOW PREVENTION DEVICE ON THE UTILITY SINK LOCATED IN THE BATHROOM. INSTRUCTED TO PROVIDE PROPER BACKFLOW PROTECTION AT UTILITY SINK IN BATHROOM.
OBSERVED NO GREASE TRAP AT 3 COPMARTMENT SINK IN THE DISHWASHING AREA. INSTRUCTED MANAGER THAT ANY SINKS IN WHICH UTENSILS AND EQUIPMENT ARE WASHED MUST BE CONNECTED TO A CATCH BASIN ON SITE OR EQUIPPED WITH AN APPROVED GREASE TRAP IN ACCORDANCE WITH LAW.
OBSERVED NO SELF CLOSING DOOR ON THE EMPLOYEE BATHROOM. INSTRUCTED MANAGER TO PROVIDE A SELD CLOSING BATHROOM DOOR AND MAINTAIN CLOSED.
OBSERVED NO COVERED TRASH CAN IN THE EMPLOYEE BATHROOM AT TIME OF INSPECTION. INSTRUCTED MANAGER TO PROVIDE A COVERED TRASH CAN FOR BATHROOM.
OBSERVED BOTH CERTIFIED FOOD MANAGERS ON SITE WITHOUT ALLERGEN TRAINING. INSTRUCTED MANAGERS TO COMPLETE AND MAINTAIN PROOF OF FOOD ALLERGEN TRAINING, AND TO MAINTAIN FOR ANY ADDITIONAL MANAGERS.
