Observed rear freezer with ice accumulation. Instructed to defrost, clean, sanitize and maintain. Found taco shells stored in garbage bags on top shelf in front prep area. Instructed manager must provide easily cleanable, restaurant grade storage containers for said items. All food must be stored in items that can be fully submerged in 3 comp sink for wash, rinse and sanitize. Found cardboard on floor in exterior walk in cooler. instructed to replace cardboard with restaurant grade matts, that can be easily cleaned (and are not porous). Observed broken fan cover in cold hold unit in front prep area. Instructed to repair, clean and sanitize all vent covers in all refrigeration units throughout.
