INSTRUCTED TO CLEAN AND MAINTAIN INTERIOR AND EXTERIOR SURFACES OF 3 COMPARTMENT SINK IN REAR, 1 COMPARTMENT OR PREP SINK IN FRONT AND IN REAR PREP AREA AND INTERIOR SURFACES OF ICE MACHINE.
INSTRUCTED TO PROVIDE PROPER RAISED SHELVES 6" OFF THE FLOOR FOR EASY ACCESS ON CLEANING (NOTED MILK CRATES ARE USED AS STORAGE SHELVES) ON PREMISE.
NO EMPLOYEE FOOD HANDLER CERTIFICATES ON PREMISES. INSTRUCTED TO PROVIDE.
Non food contact surfaces of walk in cooler shelving/racks not clean, need detailed cleaning, non food contact surfaces of cooking equipment not clean, need detailed cleaning(crevices), prep table lower shelving not clean, need detailed cleaning(crevices).
Floors under heavy equipment, cooking equipment not clean, need detailed cleaning(corners), floor in rear storage room under shelving not clean, need detailed cleaning(corners).
Stock items must be stored six inches off of floor to prevent pest harborage.
Any open cans of food must be transferred into regular containers. All food stored in coolers must be dated & labeled. Large bulk food containers on the rear shelving must be labeled to identify foods stored.
All clean single service utensils must be stored with handles up.
Cutting boards with deep, dark grooves must be sanded/bleached or replaced.Replace or repair rusty shelving inside the walk-in-cooler using a non-toxic finish.
